Spinach Strawberry Poppy-seed Salad

As a summery, healthy meal, I made Spinach Strawberry Poppy-seed Salad for dinner tonight.  This took me a few minutes to throw together, and it was delicious.  Have I said delicious on every post? Let's just say I am not posting the gross stuff I have made.


Ingredients

Spinach
Strawberries, sliced
Feta Cheese, crumbled
Pecans
Poppy-seed dressing

Not giving instructions here. Pretty sure we can all put a salad together!!!  
I WILL say that I found a really good low-fat poppy-seed dressing.  I recommend Cape-Cod Light Poppy-seed dressing. 

I can haz salad?

Buffalo Chicken Rolls

Eric and I LOVE buffalo wing inspired food.  I made this recipe from a blog I found on Pinterest: Canyoustayfordinner.com.  I had never used egg rolls wrappers from the store before.  They are super easy to use, low in calories, and fun!

 Dip these in blue cheese dressing, and you have a great snack (or dinner in our case).

Pico de Gallo

This summer I have been OBSESSED with Pico de Gallo.  It is easy to make, and is good for you... that is if you can control yourself with tortilla chips!!

Ingredients
3 cups diced tomatoes (seeds removed)
1 jalapeno diced (seeds removed)
3/4 small onion diced
1/4 cup cilantro leaves, chop after measuring
1/8 tsp salt
1 lime

Directions
I start out by dicing all of the tomatoes (which can be time consuming since you will be removing the seeds).  Combine with the diced jalapenos, diced onions, and chopped cilantro leaves.  Add the salt and the juice of one lime.  Adjust the amount of salt to your preference.  If you want it spicier, add more jalapeno.  This recipe is mild with one jalapeno.

Camping Eats

We just got back from a camping adventure in Pisgah Forest and the Smokey Mountains.  Aiming to be creative with our meals, I have a delicious recipe to share.

Campfire Foil Packs
Adapted from Allrecipes.com
Ingredients

1 lb chicken breast meat cubed
2 small onions, diced
8 ounces mushrooms, sliced
2 green peppers, sliced
4 cloves fresh garlic, diced
4 small yellow potatoes, cubed

1/4 cup olive oil
1 lemon juiced
(or substitute Italian dressing for the olive oil and lemon juice)

Directions

In a large bowl (or Ziploc bag), combine the first 6 ingredients.  Pour in the olive oil and lemon juice (substituting Italian dressing is good, too).

Divide between 4 large sheets of aluminum foil.  Top with another large sheet of foil and wrap tightly.

Cook in the hot coals of a campfire for about 40 minutes.




You could also cook this on your grill, and you can substitute with your favorite veggies.

Food Passion

I have been away from this blog for several months, and I am planning to rejuvenate this as a food blog.  As any one who as ever known me will attest, I LOVE food.  My love for delicious and nutritious good has really grown since Eric and I got married.  He has willingly tried just about anything I have made him.  He officially wins the best husband award for always being complimentary of what I make.  Although, if it has spinach, I can just forget about him being nice about that... haha.


I think I will really like blogging about food and sharing all of the recipes I have found to be good.  Even if no one reads this, I think it will bring me satisfaction to have an outlet for my obsession.  It might also pry me away from drooling over all of the pictures on Pinterest.

Can't wait to get this adventure started!
