Camping Eats

We just got back from a camping adventure in Pisgah Forest and the Smokey Mountains.  Aiming to be creative with our meals, I have a delicious recipe to share.

Campfire Foil Packs

Ingredients

1 lb chicken breast meat cubed
2 small onions, diced
8 ounces mushrooms, sliced
2 green peppers, sliced
4 cloves fresh garlic, diced
4 small yellow potatoes, cubed

1/4 cup olive oil
1 lemon juiced
(or substitute Italian dressing for the olive oil and lemon juice)

Directions

In a large bowl (or Ziploc bag), combine the first 6 ingredients.  Pour in the olive oil and lemon juice (substituting Italian dressing is good, too).

Divide between 4 large sheets of aluminum foil.  Top with another large sheet of foil and wrap tightly.

Cook in the hot coals of a campfire for about 40 minutes.




You could also cook this on your grill, and you can substitute with your favorite veggies.
